When Natalie Young arrived in Las Vegas just over 12 years ago, she came for the opposite reason of most. Rather than seeking a “what happens here, stays here” style experience, Young came to get clean and sober. Once she entered recovery, she reentered the kitchen–having worked in restaurants previously in Telluride, she resumed her work in the culinary field in some of the most highly regarded establishments on the Las Vegas Strip.
After years of working in other people’s kitchens, Young was set to leave town, headed to Santa Fe with hopes of owning her own restaurant. The chain of events that followed that decision culminated today in the opening of her very own restaurant, simply named “eat.”
This is a story of triumph, redemption, serendipity, and, most of all, community. It’s a story about the magic that can happen when people in a community care about one another. This is Chef Natalie Young’s story.
